Chum salmon (Oncorhynchus keta), also known as keta, is one of the most widely distributed Pacific salmon species, migrating across vast distances from Alaska and British Columbia to Japan and Korea. The roe, large, visually striking, intensely orange, has been a staple in Japanese cuisine for centuries, where it appears as ikura on sushi and as a key component of traditional New Year dishes.
Unlike sturgeon caviar, which is farmed over years, chum salmon roe is wild-caught, harvested during the seasonal migration when the fish return to freshwater spawning grounds. The roe is processed immediately after harvest to preserve its natural freshness and vibrant colour.

Large pearls, noticeably bigger than sturgeon caviar, with a vibrant, deep orange colour. Texture: firm, with a satisfying pop. Flavour: clean, bright, full, the ocean without brine. A saltiness that is present but never sharp. Mild fish notes that are fresh rather than pungent.

Attilus takes its name from Attila, the Latin name for the beluga sturgeon (Huso huso), a nod to the regal history of the fish. That history stretches back to 1324, when Edward II declared sturgeon a Royal Fish: only royalty were permitted to consume it.
The Attilus facility in Saxony-Anhalt, Germany draws water from a natural underground aquifer more than 50 metres below the surface, crystal-clear and mineral-rich. The facility has run on solar power since 2018 and is monitored 24 hours a day by qualified researchers and biologists. No antibiotics are ever used.

Chum salmon roe is larger, more vibrant in colour, and has a brighter, cleaner flavour than sturgeon caviar. Sturgeon caviar is more complex, more subtle, and has a characteristic buttery or nutty richness. Salmon roe is a more accessible entry point: bold, visually striking, and considerably more affordable. Both have their place.

Unlike the 26 of 27 sturgeon species now classified as endangered, Pacific chum salmon populations are managed under strict fishery controls in Alaska, Canada, and Japan. Wild-caught chum salmon roe is one of the most sustainably sourced roe products available.
